Vinification

Fondon is a wine with a bottom, a sparkling white with natural re-fermentation in the bottle. First fermentation in steel barrel and the second takes place directly in the bottle. This process brings the presence of sediments that are made up of yeast residues.

Tasting notes

Straw yellow with greenish reflections, fresh and fruity nose with notes of bread crust. Strong acidity with a savoury finish. At the service it can be decanted to separate the “bottom” and appreciate its clarity or it can be served with the “bottom” to better appreciate its aromatic characteristics.

Perfect pairing with our award-winning Sopressa and with the traditional dishes of Trevi.

From a summer place to a fresh and sparkling wine. That’s how the Fondon is born.

The term “Fondon” brings to mind the evocative natural pools and the deepest corners of the Meschio river, near the springs in the Val Lapisina area. In the past, these cool waters were the summer hangout for the kids in the area, who dived into the pools to refresh themselves on the hottest days. The springs and the surrounding environment, immersed in a verdant landscape, still represent a symbol of the deep bond between the local community and the nature that surrounds it, offering an experience that combines tradition and natural beauty.

A story, that of Fondon, which inspired the idea of the name and label of this wine with the bottom, with its natural yeast bases. To give life to the label, we have chosen simple and authentic pictorial techniques, such as watercolour, to evoke the soft and nuanced colours of the river, creating an aesthetic that recalls the purity of nature. The result is a delicate and suggestive label, which visually encloses the deep connection with the territory and celebrates the pleasure of an artisanal product.
